June is the month of Father's Day. These are very delicious recipes that can be made for all the dads on their special day.
Petite Strawberry Cheesecakes
24 vanilla wafers
2 (8 oz) pkg. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla extract
1 can strawberry filling
Beat together cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy. Line muffin cups with 2 muffin pans with 23 baking cups; place a vanilla wafer in bottom of each one. Fill each cup 2/3 full with cheese mixture and top with strawberry filling. (You can mix filling into batter if preferred). Bake at 375 degrees for 20 to 30 minutes, checking after 15 minutes.
Easy Vanilla Cake With Butter Cream Frosting
2 1/2 c. self-rising flour
1 1/2 c. sugar
1/2 c. crisco
1 c. milk
2 eggs, slightly beaten
1 tsp. vanilla extract
Sift flour and sugar into large mixing bowl; add crisco and stir just to soften. Add 3/4 cup milk and beat for 2 minutes. Add eggs, vanilla and rest of the milk. Beat 1 minute longer. Pour batter into 2 round layer pans and bake at 350 degrees for 25 to 30 minutes.
Butter Cream Frosting
1 box (1 lb) powdered sugar
1 stick margarine, softened to room temperature
4 to 5 tbsp. milk
1 tsp. vanilla extract
Mix all ingredients together until mixture is the consistency you want. Spread on completely cooled cake.
One Half Pound Cake
1/2 c. (1 stick) margarine, softened to room temperature
1/4 c. crisco
2 c. sugar
3 eggs
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 tsp. vanilla extract
Cream margarine, crisco and sugar together until light and fluffy. Add eggs one at a time and then add vanilla. Sift together flour, baking powder and salt. Add to the mixture alternately with milk. Pour into greased and floured tube pan and bake at 325 degrees for 1 hour or until toothpick inserted in center comes out clean.
Peanut Butter Cookies
1 c. margarine, softened to room temperature
1. c. peanut butter
1 c.brown sugar
1 c. white sugar
1 tsp. vanilla extract
1 tsp. salt
1 tsp. baking soda
2 c. all-purpose flour
2 eggs
Cream margarine, peanut butter and both sugars together until light and fluffy. Add the eggs and vanilla. Sift flour, baking soda and salt together and pour into the creamed mixture. Mix until well blended. Drop by teaspoon onto greased baking sheet and flatten with a fork dipped into flour or sugar. Bake at 350 degrees for 10 to 12 minutes.
Rich And Delicious Brownies
1 1/2 sticks margarine, softened to room temperature
1 1/2 c. sugar
1 1/2 tsp. vanilla extract
3 eggs
1/2 c. cocoa
1 c. all-purpose flour
1/2 tsp. baking powder
1.4 tsp. salt
With a wooden spoon, mix melted margarine, sugar, vanilla and eggs together in a large bowl. Stir in cocoa, baking powder, flour and salt until well blended. Pour into greased 13 x 9 inch baking dish and bake at 350 degrees for 20 to 30 minutes.
